Butter Chicken

Rich, creamy mommy's chicken - butter chicken marinade that melts in your mouth.

Key ingredients:

You'll need:

• 500g Mommy's Chicken (pre-marinated in our Butter Chicken Marinade)
• 2 tbsp butter + 1 tbsp oil
• 1 medium onion (chopped)
• 2 large tomatoes / 1⁄2 cup puree
• 10–12 cashews (or cream for shortcut)
• 1⁄2 cup fresh cream
• 1 tsp kasuri methi (crushed)

Steps:

1. 1.Cook the chicken – Pan-sear Mommy's Chicken marinated pieces till slightly charred. Set aside.
2. 2.Make the base – In butter + oil, sauté onion till golden. Add tomatoes + cashews, cook till soft.
3. 3.Blend & strain for a smooth gravy.
4. 4.Season – Add kasuri methi, a little sugar if needed, and simmer.
5. 5.Add chicken back in, cook for 6–8 mins till tender.
6. 6.Finish with cream and a knob of butter.
7. 7.Serve hot with naan or rice.
